The soft texture of the fish contrasts beautifully with the crunchy black cloud ear fungus.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span> (Serves 4)<\/p>\n<ul>\n<li>400 g\/14 1\u20443 oz sea bream or sea bass steaks<\/li>\n<li>125 ml\/4 fl oz\/\u00bd cup cooking oil<\/li>\n<li>1 teaspoon sugar<\/li>\n<li>2 tablespoons ginger wine<\/li>\n<li>4 tablespoons fish or chicken stock<\/li>\n<li>1 tablespoon dark soy sauce<\/li>\n<li>1 tablespoon light soy sauce<\/li>\n<li>1 tablespoon corn flour (cornstarch), mixed with 2 tablespoons water<\/li>\n<li>Salt to taste<\/li>\n<li>Ground white pepper\u00a0 to taste<\/li>\n<li>Sesame oil a few drops<\/li>\n<li>50 g\/1\u00be oz dried cloud ear fungus, soaked in warm water to soften and sliced<\/li>\n<\/ul>\n<p><strong>MARINADE<\/strong><\/p>\n<ul>\n<li>A pinch of salt<\/li>\n<li>1 teaspoon ground black pepper<\/li>\n<li>2 teaspoons corn flour (cornstarch)<\/li>\n<li>\u00bd egg<\/li>\n<\/ul>\n<p><strong>GARNISH<\/strong><\/p>\n<ul>\n<li>Spring onion (scallion)<\/li>\n<li>Coriander leaves (cilantro)<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Combine ingredients for marinade in a bowl and add fish. Rub fish well with marinade, then set aside in a cool place.<\/p>\n<p>Heat oil in a wok and half-cook fish in batches. Remove from wok and keep warm.<\/p>\n<p>Drain off all except 2 tablespoons oil from wok and reheat. Add sugar and ginger wine and cook until bubbling. Lower heat and add fish, stock, dark and light soy sauces. Mix gently.<\/p>\n<p>When fish is cooked, stir in corn flour mixture to thicken sauce. Season with salt and pepper to taste and a few drops of sesame oil. Using a slotted spoon, remove fish to a serving plate.<\/p>\n<p>Add fungus to wok and cook for I minute. Pour over fish and garnish with chopped spring onion and coriander leaves.
