{"id":795,"date":"2015-07-30T15:34:13","date_gmt":"2015-07-30T19:34:13","guid":{"rendered":"http:\/\/www.asianonlinerecipe.com\/cooking\/?p=795"},"modified":"2015-07-30T15:34:13","modified_gmt":"2015-07-30T19:34:13","slug":"spicy-hot-mussels-recipe","status":"publish","type":"post","link":"http:\/\/www.asianonlinerecipe.com\/cooking\/spicy-hot-mussels-recipe\/","title":{"rendered":"Spicy Hot Mussels Recipe"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-796\" src=\"http:\/\/www.asianonlinerecipe.com\/cooking\/wp-content\/uploads\/2015\/07\/spicy-hot-mussels.jpg\" alt=\"Spicy Hot Mussels Recipe\" width=\"500\" height=\"400\" srcset=\"http:\/\/www.asianonlinerecipe.com\/cooking\/wp-content\/uploads\/2015\/07\/spicy-hot-mussels.jpg 500w, http:\/\/www.asianonlinerecipe.com\/cooking\/wp-content\/uploads\/2015\/07\/spicy-hot-mussels-300x240.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<p>These tiny hot-pot helping of mussels in their luminescent green shells sitting in a hot lemony sauce can easily become addictive.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span> (Serves 4)<\/p>\n<ul>\n<li>15-20 mussels<\/li>\n<li>6 cm\/2\u00bd knob galangal, peeled<\/li>\n<li>5-cm\/2-in length lemon grass<\/li>\n<li>1 tablespoon chopped coriander root<\/li>\n<li>2 kaffir lime leaves, shredded<\/li>\n<li>25 g\/1 oz sweet basil, torn<\/li>\n<li>250 ml\/8 fl oz\/1 cup chicken or fish stock<\/li>\n<li>4 red chillies, seeded, if desired, and lightly crushed<\/li>\n<li>5 shallots, peeled and coarsely pounded<\/li>\n<li>3 cloves garlic, peeled and coarsely pounded<\/li>\n<li>3 tablespoons Thai fish sauce<\/li>\n<li>2 tablespoons lime juice<\/li>\n<li>1 tablespoon corn flour (cornstarch), mixed with 3 tablespoons water<\/li>\n<li>1 green chilli, sliced<\/li>\n<\/ul>\n<p><strong>DIPPING SAUCE<\/strong><\/p>\n<ul>\n<li>2 tablespoons lime juice<\/li>\n<li>3\u00bd tablespoons Thai fish sauce<\/li>\n<li>10 red chillies, crushed<\/li>\n<li>7 cloves garlic, peeled and crushed<\/li>\n<li>\u00bd tablespoons sugar<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Wash mussels in their shells and remove beards. Scrub shells well. Rinse in several changes of water.<\/p>\n<p>Blend galangal with lemon grass and coriander root until pasty. Set aside. Prepare dipping sauce. Combine all ingredients in a bowl. Set aside.<br \/>\nPlace mussels in an earthenware pot or a heavy-based non-aluminum pan. Add blended ingredients, kaffir lime leaves, basil, stock, chillies, shallots, garlic, fish sauce and lime juice. Simmer for 5 minutes, or until mussels open.<\/p>\n<p>Remove mussels and keep warm. Simmer sauce for another 5 minutes to thicken slightly. Stir in cornflour mixture and bring to the boil, stirring. Adjust thickness of sauce with stock, if desired.<\/p>\n<p>Pour thickened sauce over mussels and stir to heat through. Serve hot with dipping sauce. Garnish with green chilli.<\/p>\n<p><strong>MICROWAVE METHOD<\/strong><\/p>\n<p>Place mussels and with blended ingredients, kaffir lime leaves, basil, stock, chillies, shallots and garlic in a microwave-safe dish. Cover partly with plastic to prevent splattering. Cook for 8 minutes on Medium until mussels open.<\/p>\n<p>Remove plastic. Stir once and ladle fish sauce and lime juice on mussels. Stir in cornflour mixture, then cook for 1 minute on High. Stir and serve hot with dipping sauce.
