There are two kinds; one has a pale-green, fine leaf, the other is pale yellow.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span> (Serves 4)<\/p>\n<ul>\n<li>30 g (1 oz) dried shrimp<\/li>\n<li>1 tablespoon oil<\/li>\n<li>400 g (14 oz) Chinese cabbage, cut into 1 cm (\u00bd inch) strips<\/li>\n<li>1 tablespoon light soy sauce<\/li>\n<li>2 teaspoons sugar<\/li>\n<li>1 tablespoon clear rice vinegar<\/li>\n<li>2 teaspoons roasted sesame oil<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Soak the dried shrimp in boiling water for 1 hour, then drain.<\/p>\n<p>Heat a wok over high heat, add the oil and heat until very hot. Toss the Chinese cabbage for 2 minutes, or until wilted. Add the shrimp, soy sauce, sugar and rice vinegar and cook for 1 minute.
