The blandness of the tofu is a contrast to both the texture and flavor of the mushrooms. For the best favor, use the type of mushrooms suggested.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span> (Serves 2)<\/p>\n<ul>\n<li>350 g (12 oz) firm tofu (bean curd)<\/li>\n<li>1 teaspoon sesame oil<\/li>\n<li>2 teaspoons light soy sauce<\/li>\n<li>\u00bcteaspoon ground black pepper, plus some to sprinkle<\/li>\n<li>1 tablespoon finely shredded ginger<\/li>\n<li>5 tablespoons vegetable stock or water<\/li>\n<li>2 tablespoons light soy sauce<\/li>\n<li>2 teaspoons cornflour (cornstarch)<\/li>\n<li>\u00bd teaspoon sugar<\/li>\n<li>1\u00bd tablespoons vegetable oil<\/li>\n<li>2 garlic cloves, finely chopped<\/li>\n<li>200 g (7 oz) oyster mushrooms, hard stalks removed, cut in half if large<\/li>\n<li>200 g (7 oz) shiitake mushrooms, hard stalks removed<\/li>\n<li>2 spring onions (scallions), sliced diagonally, for garnish<\/li>\n<li>1 long red chilli, seeded and finely sliced, for garnish<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Drain each block of tofu and cut into 2.5 cm (1 inch) pieces. Put them in a shallow dish and sprinkle with the sesame oil, light soy sauce, ground pepper and ginger. Leave to marinate for 30 minutes.<\/p>\n<p>Mix the stock with the light soy sauce, cornflour and sugar in a small bowl until smooth.<\/p>\n<p>Heat the oil in a wok or frying pan and stir-fry the garlic over a medium heat until light brown.<\/p>\n<p>Add all the mushrooms and stir-fry for about 4 minutes or until the mushrooms are cooked.<\/p>\n<p>Add the cornflour liquid, then carefully add the pieces of tofu and gently mix for 1-2 minutes.
