You should beware of eating a whole sprig in one go though as, just like the pepper they become, they can be extremely hot.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span> (Serves 4)<\/p>\n<ul>\n<li>60 ml\/2 fl oz\/\u00bc cup coconut cream<\/li>\n<li>2 tablespoons yellow curry paste or bought paste<\/li>\n<li>1 tablespoon fish sauce<\/li>\n<li>2 teaspoons palm sugar (jaggery)<\/li>\n<li>\u00bc\u00a0teaspoon turmeric<\/li>\n<li>600 g\/1 lb 5 oz boneless, skinless chicken thighs, cut into thin slices<\/li>\n<li>440 ml\/15\u00bc fl oz\/1\u00be cups coconut milk<\/li>\n<li>100 g\/3 oz bamboo shoots, thinly sliced<\/li>\n<li>4 sprigs fresh green peppercorns<\/li>\n<li>4-6 kaffir lime (makrut) leaves<\/li>\n<li>12 Thai sweet basil leaves<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Put the coconut cream in a wok or saucepan and simmer over a medium heat for about 5 minutes, or until the cream separates and a layer of oil forms on the surface. Stir the cream if it starts to brown around the edges.<\/p>\n<p>Add the curry paste, stir well to combine and cook until fragrant. Add the fish sauce, palm sugar and turmeric and stir well. Cook for 2-3 minutes, stirring occasionally, until the mixture darkens.<\/p>\n<p>Add the chicken to the pan and stir to coat all the pieces evenly in the spice mixture. Cook over a medium heat for 5 minutes, stirring occasionally and adding the coconut milk a tablespoon at a time to incorporate.<\/p>\n<p>Add the bamboo shoots, peppercorns, lime and basil leaves and cook for another 5 minutes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Fresh peppercorns have a fragrant, pungent quality that lifts the flavor of any curry in which they are used.
