These steaks, coated with crunchy sesame seeds, are sauteed only until the crust is golden, bringing out the nutty aroma while leaving the tuna rare.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span> (Serves 4)<\/p>\n<ul>\n<li>4 x 200 g (7 oz) tuna steaks<\/li>\n<li>115 g (4 oz\/\u00be cup) sesame seeds<\/li>\n<li>200 g (7 oz\/1 cup) medium-grain rice<\/li>\n<li>2\u00bd tablespoons rice wine vinegar<\/li>\n<li>1 tablespoon mirin<\/li>\n<li>1 teaspoon sugar<\/li>\n<li>\u00bc\u00a0teaspoon salt<\/li>\n<li>1 nori sheet, finely shredded<\/li>\n<li>60 ml (2 fl oz\/\u00bc cup) peanut oil<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>For the Wasabi Mayonnaise:<\/strong><\/span><\/p>\n<ul>\n<li>125 g\/4\u00bd oz\/\u00bd cup Japanese or whole-egg mayonnaise<\/li>\n<li>2 teaspoons wasabi paste<\/li>\n<\/ul>\n<ul>\n<li>Pickled ginger, to serve, optional<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Coat the tuna steaks in the sesame seeds, pressing down to coat well. Refrigerate until needed.<\/p>\n<p>Wash the rice until the water runs clear, then put in a saucepan with 500 ml (17 fl oz\/2 cups) water. Bring to the boil, then reduce the heat to very low and cook, covered, for 10-12 minutes. Turn off the heat and leave, covered, for 5 minutes. While hot, pour on the combined rice wine vinegar, mirin, sugar and\u00a0\u00bc teaspoon salt. Stir with a fork to separate the grains, then fold in the shredded nori. Keep warm.<\/p>\n<p>Heat the oil in a large frying pan, add the tuna steaks and cook for 1-2 minutes on each side, or until the sesame seeds are crisp and golden. The tuna should still be a little pink in the middle. Drain on paper towels.<\/p>\n<p>Spoon the rice into four lightly greased 125 ml (4 fl oz\/\u00bd cup) ramekins or cups, pressing down lightly, then invert onto each plate and remove the ramekins.<\/p>\n<p>To make the wasabi mayonnaise, combine the Japanese mayonnaise and wasabi in a small bowl.<\/p>\n<p>Serve the tuna with the nori rice and with some wasabi mayonnaise on the side.
